Cook the Couscous

In a medium saucepan, bring 1.5 cups of water to a boil. Add the Mediterranean couscous, reduce heat to low, cover, and simmer for about 10 minutes or until tender. Remove from heat and let it cool.

Prepare the Salad Ingredients

While the couscous is cooking, prepare the remaining ingredients. In a large mixing bowl, combine the arugula, fresh herbs, diced cucumber, sundried tomatoes, and chopped shallots.

Mix Everything Together

Once the couscous has cooled, fluff it with a fork and add it to the mixing bowl with the other salad ingredients. Gently toss to combine.

Add Goat Cheese

Crumble the goat cheese over the top of the salad and gently mix it in.

Dress the Salad

Drizzle with honey balsamic vinaigrette to taste and toss gently to coat all ingredients.

Serve

Serve immediately, or chill in the refrigerator for about 30 minutes to enhance the flavors.
