Ingredients: 1 cup Mediterranean couscous; 2 cups Peppery arugula; 1 cup Fresh herbs (parsley, mint, or basil); 1 medium English cucumber, diced; 1 cup Sundried tomatoes, chopped; 1 medium Shallots, finely chopped; 4 oz Creamy goat cheese, crumbled

In a medium saucepan, bring 1.5 cups of water to a boil. Add the Mediterranean couscous, reduce heat to low, cover, and simmer for about 10 minutes or until tender. Remove from heat and let it cool.

Cook the Couscous

While the couscous is cooking, prepare the remaining ingredients. In a large mixing bowl, combine the arugula, fresh herbs, diced cucumber, sundried tomatoes, and chopped shallots.

Prepare the Salad Ingredients

Once the couscous has cooled, fluff it with a fork and add it to the mixing bowl with the other salad ingredients. Gently toss to combine.

Mix Everything Together

Crumble the goat cheese over the top of the salad and gently mix it in.

Add Goat Cheese

Drizzle with honey balsamic vinaigrette to taste and toss gently to coat all ingredients.

Dress the Salad

Serve immediately, or chill in the refrigerator for about 30 minutes to enhance the flavors.
