Prepare the Potatoes

Wash the fingerling potatoes thoroughly and place them in a pot of salted water. Bring to a boil and cook until fork-tender, about 15-20 minutes.

Smash the Potatoes

Once cooked, drain the potatoes and let them cool slightly. Place each potato on a cutting board and gently smash them with the bottom of a glass or a potato masher until flattened but still intact.

Fry the Potatoes

In a large skillet, heat the olive oil over medium-high heat. Add the smashed potatoes in a single layer and fry until golden brown and crispy, about 4-5 minutes per side.

Prepare the Herbed Butter

In a small saucepan, melt the butter over low heat. Stir in the chopped fresh herbs and cook for 2-3 minutes until fragrant. Remove from heat.

Serve

Once the potatoes are crispy, remove them from the skillet and place them on a serving platter. Drizzle the herbed butter over the potatoes, sprinkle with Maldon sea salt, and top with freshly grated Parmesan cheese. Serve immediately.
