Prepare the Potatoes

Peel and chop the Yukon Gold potatoes into evenly sized chunks. Place them in a large pot and cover with cold water. Add 1 teaspoon of salt.

Boil the Potatoes

Bring the pot to a boil over high heat. Once boiling, reduce to medium heat and cook until the potatoes are tender when pierced with a fork, about 15-20 minutes.

Make Beurre Monte

In a small saucepan, melt the unsalted butter over low heat until just melted. Do not let it brown.

Drain and Mash

Once the potatoes are cooked, drain them and return them to the pot. Use a potato masher or ricer to mash the potatoes until smooth.

Combine Ingredients

Slowly add the melted butter, heavy cream, salt, and black pepper to the mashed potatoes. Stir until well combined and creamy.

Add Scallions

Chop the scallions and fold them into the mashed potatoes. Adjust seasoning with more salt and pepper if needed.

Serve

Transfer the mashed potatoes to a serving bowl and garnish with additional chopped scallions if desired. Serve warm.
