Make the Dough

In a large bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy. Stir in olive oil, salt, and flour gradually until a dough forms. Knead on a floured surface for about 10 minutes until smooth.

First Rise

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Preheat the Oven

Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat.

Prepare the Garlic Oil

In a small bowl, mix minced garlic with a tablespoon of olive oil. Set aside.

Shape the Flatbreads

Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a flat circle about 1/4 inch thick.

Assemble the Flatbreads

Brush each flatbread with the garlic oil mixture. Sprinkle the three cheeses evenly over the top.

Bake

Place the flatbreads on a baking sheet or directly on the pizza stone. Bake for about 10-12 minutes until golden brown and the cheese is bubbly.

Garnish

Remove from the oven, sprinkle with chopped parsley, and let cool slightly before slicing.
