Prepare the Filling
In a mixing bowl, combine the sautéed spinach mixture with crumbled feta cheese. Mix well to incorporate all ingredients.

Assemble the Carré
Preheat the oven to 400°F (200°C). Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into a rectangle, about 10x6 inches. Place a portion of the spinach and feta mixture in the center of each rectangle, leaving space around the edges. Fold the pastry over to form a rectangle and seal the edges by crimping with a fork.

Bake the Carré
Place the assembled carré on a baking sheet lined with parchment paper. Brush the tops with the beaten egg. Bake in the preheated oven for 20-25 minutes or until golden brown and puffed.

Serve
Remove from the oven, let cool for a few minutes, then cut into squares and serve warm.
