1. Prepare the Dough

In a mixing bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy. Add flour, salt, and olive oil. Knead until smooth. Let it rise for 1 hour.

2. Prepare the Filling

In a skillet, heat olive oil over medium heat. Add onions and sauté until translucent. Add spinach, tomatoes, salt, pepper, and lemon juice. Cook for 5-7 minutes until the spinach is wilted. Let the filling cool.

3. Shape the Fatayer

Once the dough has risen, punch it down and divide it into small balls. Roll each ball into a circle. Place a spoonful of filling in the center, fold the dough to create a triangle, and seal the edges.

4. Bake the Fatayer

Preheat the oven to 375°F (190°C). Place the filled fatayer on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until golden brown.
