Prepare the Eggplant

Preheat the oven to 200°C (400°F). Slice the eggplants in half lengthwise and score the flesh in a diamond pattern. Place on a baking sheet, brush with olive oil, and sprinkle with salt. Roast in the oven for 25-30 minutes until tender and golden.

Make the Tahini Sauce

In a bowl, mix tahini, minced garlic, cumin, paprika, salt, and enough water to achieve a smooth, pourable consistency. Adjust salt to taste.

Prepare the Yogurt Mixture

In another bowl, mix the plain yogurt with a bit of salt and black pepper. You can also add some chopped parsley for extra flavor.

Assemble the Dish

Once the eggplant is roasted, start layering the dish. First, place broken pieces of toasted pita bread on a serving dish. Top with a generous layer of chickpeas, followed by the roasted eggplant. Spoon the yogurt mixture over the top, and finally drizzle with the tahini sauce. Garnish with chopped parsley.
