    Marinate the Salmon

    In a medium bowl, whisk together the olive oil, lemon juice, ground sumac, garlic powder, salt, and black pepper. Cut the salmon into 1-inch cubes and add them to the marinade. Toss to coat evenly, cover, and refrigerate for at least 30 minutes.

    Prepare the Vegetables

    While the salmon is marinating, chop the bell peppers, red onion, and zucchini into 1-inch pieces.

    Assemble the Kabobs

    Thread the marinated salmon and vegetables onto the skewers, alternating between salmon and vegetables.

    Preheat a grill or grill pan over medium-high heat. Place the skewers on the grill and cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.
