Make the Dough
In a large mixing bowl, combine semolina, flour, powdered sugar, and baking powder. Mix well.

Chill the Dough
Cover the dough with plastic wrap and refrigerate for at least 30 minutes.

Prepare the Fillings
While the dough chills, prepare your desired fillings by mixing the chopped pistachios, walnuts, and dates in separate bowls.

Shape the Cookies
Preheat the oven to 350°F (175°C). Take a small piece of dough, flatten it in your palm, add a spoonful of filling, and shape it into a ball. Place on a baking sheet lined with parchment paper.

Bake
Bake in the preheated oven for about 15-20 minutes or until the bottoms are lightly golden.

Cool and Serve
Allow the cookies to cool on a wire rack. Dust with powdered sugar before serving.
