Sauté Vegetables
In a large pot, heat the remaining olive oil over medium heat. Add the diced onion and sauté until translucent. Then add the sliced carrots and cauliflower florets, stirring for about 5 minutes.

Cook the Rice
Add the rinsed basmati rice to the pot with the vegetables. Stir in the remaining garlic, cinnamon stick, cumin seeds, cardamom pods, turmeric, and salt. Pour in the water or chicken broth and bring to a boil.

Simmer
Once boiling, reduce the heat to low, cover the pot, and simmer for about 15-20 minutes or until the rice is tender and the liquid is absorbed.

Assemble Maklouba
Once the chicken is done, remove it from the oven and let it rest for a few minutes. In a large serving dish, layer the rice and vegetable mixture, then place the roasted chicken on top.

Flip and Serve
To serve, carefully invert the dish onto a large serving platter so the chicken is on top. Garnish with chopped parsley and serve warm.
