Prepare the Filling
In a bowl, mix chopped walnuts, pistachios, almonds, cinnamon, and a tablespoon of sugar for the filling.

Layer the Phyllo Dough
Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish. Layer 8 sheets of phyllo dough, brushing each layer with melted butter. Spread a layer of the nut mixture on top.

Continue Layering
Add 4 more layers of phyllo, brushing each with butter, then add another layer of nuts. Repeat until you have 4 layers of nut filling and finish with 8 layers of phyllo on top.

Cut and Bake
Cut the baklava into diamond shapes. Bake in the preheated oven for 45-50 minutes, or until golden brown.

Add the Syrup
Remove baklava from the oven and immediately pour cooled syrup over the hot baklava. Let it soak for at least 4 hours or overnight.

Prepare Choclava
For Dark Choclava, melt dark chocolate and drizzle over cut pieces. For White Choclava, melt white chocolate and drizzle over another set of pieces.

Serve assorted baklava pieces including Bird's Nest, Mini Rose shapes, and variations with dark and white chocolate.
