Burger Preparation
Prepare the Shallot Bacon Jam
In a skillet over medium heat, cook 4 slices of chopped bacon until crispy. Remove the bacon and set aside, reserving the fat. Add 1 finely chopped shallot to the skillet and sauté in the bacon fat until translucent. Stir in 2 tablespoons of brown sugar and 1 tablespoon of balsamic vinegar, and cook until thickened. Mix in the bacon, season with salt and pepper, and set aside.
Form and Cook the Burger
Divide the ground beef into two equal portions and gently form them into balls. Heat a cast-iron skillet or griddle over high heat. Once hot, place the beef balls on the skillet and use a spatula to smash them down into patties. Season with salt and pepper. Cook for about 3-4 minutes until a crust forms, then flip the patties.
Add Cheese and Assemble
After flipping the patties, add a slice of American cheese on each patty and cook for an additional 1-2 minutes until the cheese melts. Toast the burger buns in the same skillet until golden brown. Assemble the burgers by placing the patty on the bun, topping with shallot bacon jam, and closing with the top bun.
