Prepare the Filling
In a large bowl, combine ground pork, grated carrots, bean sprouts, minced garlic, chopped green onions, salt, and pepper. Mix well until all ingredients are thoroughly combined.

Wrap the Egg Rolls
Soak rice paper wrappers in warm water for a few seconds until soft. Place a small amount of the filling in the center of each wrapper, fold in the sides, and roll tightly to enclose the filling. Repeat until all filling is used.

Fry the Egg Rolls
Heat vegetable oil in a large skillet over medium-high heat. Once hot, carefully place egg rolls in the oil and fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Serve
Serve the egg rolls warm, wrapped in lettuce leaves and garnished with fresh mint leaves. Provide nuoc mam on the side for dipping.
