Prepare the Broth
In a large pot, combine the beef broth, fermented bean short ribs, and beef brisket. Bring to a gentle boil over medium heat.

Simmer the Broth
Reduce heat and let the broth simmer for about 2 hours, skimming off any foam that rises to the surface.

Cook the Noodles
In a separate pot, boil water and cook the rice noodles according to package instructions. Drain and set aside.

Strain the Broth
After simmering, strain the broth to remove the short ribs and brisket. Return the clear broth to the pot.

Add Flavor
Stir in the fish sauce, hoisin sauce, and sriracha to the broth. Adjust seasoning to taste.

Serve
In bowls, place a portion of cooked rice noodles, ladle the hot broth over the noodles, and top with slices of beef brisket and pieces of short ribs. Garnish with fresh basil, bean sprouts, sliced jalapeños, and lime wedges. Drizzle with marrow oil before serving.
