Mochi Preparation

Prepare the Mochi Dough
In a mixing bowl, combine the glutinous rice flour, granulated sugar, and water. Mix until smooth and well combined.

Steam the Dough
Pour the mixture into a lightly greased heatproof dish. Steam the mixture over boiling water for about 20 minutes, or until the dough is translucent and cooked through.

Divide and Flavor the Dough
Once cooked, turn the dough out onto a surface dusted with cornstarch. Divide the dough into three equal parts. Add lychee puree to one part, mango puree to the second part, and passion fruit puree to the third. Knead each portion until the flavor is fully incorporated.

Shape the Mochi
Dust your hands and working surface with cornstarch. Take a portion of flavored dough and flatten it out using your fingers. Place a small ball of your desired filling (fruit, ice cream, etc.) in the center and fold the edges over to seal. Roll it gently into a ball.

Finish and Serve
Repeat the process for all three flavors. Dust the finished mochi with cornstarch to prevent sticking. Serve immediately or refrigerate for later.
