Prepare the Pie Crust

In a large bowl, mix together the flour, sugar, and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs. Stir in the ice water, a tablespoon at a time, until the dough comes together. Divide the dough into two balls, flatten into discs, wrap in plastic, and refrigerate for at least 1 hour.

Make the Apple Filling

In a large bowl, combine the sliced apples, sugar, cinnamon, lemon juice, and flour. Toss to coat and set aside.

Assemble the Apple Pie

Preheat the oven to 425°F (220°C). Roll out one dough disc for the bottom crust and fit it into a pie pan. Fill with the apple mixture, then roll out the second disc and place it over the filling. Crimp the edges to seal and cut slits in the top for steam to escape.

Bake the Apple Pie

Bake in the preheated oven for 45-50 minutes, or until the apples are tender and the crust is golden brown. Let cool before serving.

Pumpkin Pie

Prepare the Pumpkin Filling

In a mixing bowl, combine the pumpkin puree, sweetened condensed milk, eggs, cinnamon, nutmeg, ginger, and vanilla. Mix until smooth and well combined.

Assemble the Pumpkin Pie

Preheat the oven to 350°F (175°C). Roll out one dough disc for the bottom crust and fit it into a pie pan. Pour the pumpkin filling into the crust.

Bake the Pumpkin Pie

Bake in the preheated oven for 45-55 minutes, or until set in the center. Let cool before serving.
