Fries Preparation
Cutting the Potatoes
Wash and peel the russet potatoes. Cut them into thin fries, about 1/4 inch thick.
Soaking the Potatoes
Soak the cut fries in cold water for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.
Drying the Fries
After soaking, drain the fries and pat them dry with a clean kitchen towel to remove moisture.
Seasoning the Fries
Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, season with kosher salt, dried oregano, and freshly ground black pepper to taste.

Mixing the Topping
In a small bowl, combine the crumbled feta cheese, chopped fresh parsley, and lemon juice. Stir well to combine.
Serving
Once the fries are ready and seasoned, top them with the feta mixture just before serving.
