Marinade Preparation
Marinate the Lamb
In a large bowl, combine Greek yogurt, olive oil, minced garlic, lemon juice, dried oregano, ground cumin, salt, and black pepper. Mix well. Cut the leg of lamb into 1-inch cubes and add to the marinade. Ensure all pieces are well coated. Cover and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Grill the Lamb
Preheat your grill or grill pan over medium-high heat. Thread marinated lamb cubes onto skewers. Grill for about 10-12 minutes, turning occasionally, until lamb is cooked to your desired doneness (medium-rare is recommended at 145°F). Remove from grill and let rest for a few minutes.
Assembling the Gyro
Assemble the Gyro
Warm the pita bread on the grill for 1-2 minutes. Place grilled lamb cubes in the center of each pita. Top with hand-cut fries, diced tomatoes, sliced onions, a sprinkle of paprika, and a generous dollop of tzatziki sauce. Garnish with chopped parsley. Fold the pita over the filling and serve immediately.
