Meat Mixture

Method

Prepare the Meat Mixture

1

Mix the Meat

In a large bowl, combine ground beef, ground pork, minced garlic, chopped red onion, dried oregano, salt, black pepper, and olive oil. Mix well until all ingredients are evenly incorporated.

2

Shape the Patties

Divide the meat mixture into equal portions and shape them into oval patties. Set aside.

Make the Tzatziki Sauce

3

Combine Ingredients

In a medium bowl, mix Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, salt, and chopped dill until smooth. Adjust seasoning to taste.

4

Chill the Sauce

Cover the tzatziki sauce and refrigerate for at least 30 minutes to allow the flavors to meld.

Prepare Hand-Cut Fries

5

Fry the Potatoes

In a large pot, heat olive oil over medium heat. Once hot, add the cut potatoes and fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, then season with salt to taste.

Cook the Bifteki

6

Grill the Patties

Preheat a grill or skillet over medium-high heat. Cook the shaped bifteki for about 5-6 minutes on each side or until cooked through and nicely browned.

Assemble the Gyro

7

Prepare the Pita

Warm the pita bread on the grill or in a pan for about 1 minute on each side.

8

Fill the Pita

Spread a generous amount of tzatziki sauce on each pita, add a bifteki patty, topped with diced tomatoes, sliced red onion, and chopped parsley. Add hand-cut fries inside the pita.

9

Serve

Wrap the pita around the filling and serve immediately while hot.
