Method
Prepare the Meat Mixture
Mix the Meat
In a large bowl, combine ground beef, ground pork, minced garlic, chopped red onion, dried oregano, salt, black pepper, and olive oil. Mix well until all ingredients are evenly incorporated.
Shape the Patties
Divide the meat mixture into equal portions and shape them into oval patties. Set aside.
Make the Tzatziki Sauce
Combine Ingredients
In a medium bowl, mix Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, salt, and chopped dill until smooth. Adjust seasoning to taste.
Chill the Sauce
Cover the tzatziki sauce and refrigerate for at least 30 minutes to allow the flavors to meld.
Prepare Hand-Cut Fries
Cook the Bifteki
Assemble the Gyro
Prepare the Pita
Warm the pita bread on the grill or in a pan for about 1 minute on each side.
Fill the Pita
Spread a generous amount of tzatziki sauce on each pita, add a bifteki patty, topped with diced tomatoes, sliced red onion, and chopped parsley. Add hand-cut fries inside the pita.
Serve
Wrap the pita around the filling and serve immediately while hot.
