Rice Pilaf

Prepare the Rice

In a saucepan, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.

Add Garlic and Rice

Stir in minced garlic and cook for an additional minute. Add the rice and sauté for 2-3 minutes until lightly toasted.

Cook the Rice

Pour in the chicken or vegetable broth, add salt, black pepper, and bay leaf. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked and liquid is absorbed.

Lamb Souvlaki

Marinate the Lamb

In a bowl, combine cubed lamb with olive oil, lemon juice, minced garlic, oregano, salt, and black pepper. Mix well and let marinate for at least 30 minutes (or up to overnight in the fridge).

Prepare Skewers

Thread marinated lamb onto the skewers.

Grill the Lamb

Preheat the grill to medium-high heat. Grill the skewers for about 10-12 minutes, turning occasionally, until lamb is cooked to your liking.

Assemble the Bowl

Plate the Dish

Spoon the cooked rice pilaf into bowls. Top with grilled lamb skewer, diced tomatoes, and sliced red onions.

Add Sauce

Serve with tzatziki sauce on the side or drizzled over the top.
