Gyro Meat
Prepare the Meat Mixture
In a large bowl, combine the ground lamb and ground beef. Add the finely chopped onion, minced garlic, oregano, cumin, salt, and black pepper. Mix until well combined.
Shape and Cook the Meat
Form the meat mixture into a loaf shape and place it on a baking sheet. Drizzle with olive oil. Bake in a preheated oven at 375°F (190°C) for 45-50 minutes, or until the meat is cooked through.
Slice the Meat
Once cooked, allow the meat to rest for 10 minutes before slicing it thinly.
Tzatziki Sauce
Make the Tzatziki
In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, and salt. Stir until well mixed. Refrigerate for at least 30 minutes before serving to let the flavors meld.
Gyro Assembly
Assemble the Gyros
Warm the pita bread in a dry skillet or microwave. On each pita, layer slices of gyro meat, followed by tomato slices, red onion, and shredded lettuce. Drizzle with tzatziki sauce.
Serve
Fold the pita over the fillings and serve immediately while warm.
