Method

Chocolate Preparation

1

Melt the Chocolate

In a double boiler, gently melt the milk chocolate and cocoa butter together until smooth and fully combined. Stir occasionally to prevent overheating.

2

Add Dairy and Flavor

Once melted, remove from heat and stir in the milk powder, sugar, and vanilla extract until everything is well incorporated and smooth.

Almond Preparation

3

Prepare the Almonds

While the chocolate mixture is cooling, spread the raw almonds on a baking sheet. Lightly roast them in a preheated oven at 180°C (350°F) for about 8-10 minutes, or until fragrant and slightly golden. Remove from oven and sprinkle with sea salt.

Bar Assembly

4

Combine and Set

Once the chocolate mixture is slightly cooled but still pourable, fold in the roasted almonds. Pour the mixture into a chocolate bar mold or a lined small rectangular dish. Smooth the top with a spatula.

5

Chill

Refrigerate the chocolate bar for at least 1-2 hours until set completely. Once firm, break or cut it into bars or squares.
