Zucchini Preparation
Prepare the Zucchini
Wash and dry the zucchini. Cut off the ends and slice them into 1/4-inch thick rounds.
Salt the Zucchini
Place the zucchini slices in a colander and sprinkle with salt. Allow them to sit for 15-20 minutes to draw out excess moisture.
Breading Mixture
Frying
Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until hot (approximately 350°F or 175°C).
Bread the Zucchini
Pat the zucchini slices dry with paper towels. Dip each slice into the egg mixture, then coat in the breading mixture. Shake off any excess.
Fry the Zucchini
Carefully place the breaded zucchini slices into the hot oil in batches, making sure not to overcrowd the pan. Fry for 2-3 minutes on each side until golden brown and crispy.
Drain the Zucchini
Once fried, remove the zucchini slices with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
Serving
Serve with Ranch Dressing
Arrange the fried zucchini on a serving platter and serve hot with ranch dressing on the side for dipping.
