Preheat the Oven

Preheat your oven to 350°F (175°C).

Mix Dry Ingredients

In a large mixing bowl, sift together the all-purpose flour, cocoa powder, granulated sugar, baking powder, and salt.

Combine Wet Ingredients

In a separate bowl, whisk together the eggs, melted butter, and vanilla extract until well combined.

Combine Mixtures

Pour the wet mixture into the dry ingredients and mix until just combined. The batter will be thick.

Bake the Wafer Layers

Spread the batter evenly onto a parchment-lined baking sheet, about 1/4 inch thick. Bake for 15-20 minutes or until the edges are set and the center is firm. Let cool completely.

Melt the Chocolate

In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until smooth and fully melted.

Coat the Wafer Layers

Once the wafer layers are completely cooled, cut them into rectangular shapes, about 2 inches by 4 inches. Dip each piece into the melted chocolate, ensuring it is fully coated. Allow excess chocolate to drip off.

Set the Coating

Place the coated wafers on a parchment-lined baking sheet. Refrigerate for at least 30 minutes, or until the chocolate has fully set.
