Prepare the Lamb

Season the lamb shanks with salt and black pepper on all sides.

Sear the Lamb

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the lamb shanks and sear until browned on all sides (about 4-5 minutes per side). Remove the shanks and set aside.

Sauté Vegetables

In the same pot, add the chopped onion, carrots, and celery. Sauté until the vegetables begin to soften (about 5-7 minutes). Add the minced garlic and cook for an additional minute.

Add Tomato Paste and Wine

Stir in the tomato paste and cook for 1-2 minutes. Then pour in the red wine, scraping any browned bits from the bottom of the pot. Bring to a simmer.

Combine Ingredients

Return the lamb shanks to the pot. Add the broth, rosemary, and thyme. Bring to a boil, then reduce heat to low.

Simmer

Cover the pot and let it simmer for 2-3 hours or until the lamb is tender and easily pulls away from the bone.

Serve

Once cooked, remove the lamb shanks and serve with the sauce and vegetables.
