Roll the lemons on a flat surface to release their juices. Cut each lemon in half and squeeze the juice into a measuring cup, ensuring to remove any seeds. You should have about 1 cup of fresh lemon juice.

Prepare the Lemon Juice

In a saucepan, combine 1 cup of lemon juice and 1 cup of granulated sugar. Add 1 cup of water and heat over medium heat, stirring until the sugar completely dissolves. Remove from heat and let cool.

Make the Lemonade Base

In a large pitcher, combine the cooled lemonade base with the remaining 3 cups of water. Stir well to combine.

Just before serving, gently stir in 2 cups of sparkling water to give the lemonade a fizzy touch.

In a medium saucepan, bring 4 cups of water to a boil over medium-high heat.

Once the water is boiling, add 2 cups of black tea leaves to the pot. Stir gently.

Add the cardamom pods, cinnamon stick, and ginger to the tea. Reduce heat and let it simmer for 10 minutes.

After 10 minutes, add 1 cup of milk and 2 tablespoons of sugar to the pot. Stir to combine.

Using a coffee grinder, grind the coffee beans to a medium-coarse consistency suitable for brewing.

Step 1: Grind the Coffee Beans

In a kettle, bring 2 cups of water to a boil. Remove from heat once boiling.

Step 2: Boil Water

In a coffee maker or French press, combine the ground coffee with the boiled water. Let it steep for about 4-5 minutes.

Step 3: Brew the Coffee

If using a French press, press down the plunger to separate the grounds from the brewed coffee. If using a coffee maker, just pour the brewed coffee into a mug.

Step 4: Strain the Coffee

If desired, add milk, sugar, and vanilla extract to taste. Stir well to combine.

In a medium saucepan, combine the granulated sugar and 1 cup of water. Heat over medium heat, stirring until the sugar has completely dissolved. Add the fresh lemon juice and fresh orange juice. Bring to a gentle simmer and cook for about 5 minutes. Remove from heat and let it cool completely.

Make the Citrus Syrup

In a separate bowl, add the fresh mint leaves and pour 1 cup of boiling water over them. Let the mint steep for about 10 minutes, then strain the mixture to remove the leaves.

Prepare the Mint Infusion

In a large pitcher, combine the cooled citrus syrup, the mint infusion, and 4 cups of soda water. Stir gently to combine everything without losing too much fizz.

Combine the Ingredients

Fill glasses with ice cubes. Pour the Sicilian soda mixture over the ice, leaving some space at the top. Garnish each glass with slices of orange and lemon.

Simple Syrup

Take a highball glass and fill it with ice cubes to chill the glass.

Prepare the Glass

In a shaker, combine 30 ml of fresh lemon juice, 15 ml of simple syrup, and 2 dashes of Angostura aromatic bitters.

Mix the Ingredients

Add ice to the shaker and shake well for about 15 seconds to chill and combine the ingredients.

Shake the Mixture

Strain the mixture from the shaker into the prepared glass filled with ice, then gently pour in 200 ml of San Pellegrino sparkling water.

Garnish with a slice of lemon and fresh mint leaves for an aromatic finish.

Core and chop the fresh apples into small pieces. Place them into a large pot.

Prepare the Apple Mixture

Pour 4 cups of water into the pot with the chopped apples. Bring the mixture to a boil over medium-high heat.

Once boiling, reduce the heat to low and add 1 cup of sugar, 1 tablespoon of lemon juice, 1 teaspoon of ground cinnamon, and 5 whole cloves. Stir well until the sugar is fully dissolved.

Sweeten the Mixture

Cover the pot and let the mixture simmer for about 30 minutes, stirring occasionally, until the apples are soft.

Cook the Apples

After simmering, remove the pot from heat. Use a fine mesh strainer or cheesecloth to strain the apple mixture into a large bowl, discarding the solids. You should have a nice liquid apple cider.

Allow the strained cider to cool to room temperature, then refrigerate it for at least 1 hour or until chilled.

In a pitcher, combine the chilled apple cider with 4 cups of sparkling water. Stir gently to combine.

In a large brew kettle, heat 5 liters of water to approximately 164°F (73°C).

Mashing

Once the water reaches temperature, add the Pilsner, Munich, and Caramel malts. Stir well to ensure there are no dry clumps.

Add Grains

Keep the mash temperature around 150°F (65°C) for 60 minutes. Stir occasionally.

Maintain Temperature

After the mash has completed, sparge the grains with hot water (around 170°F or 77°C) to collect the wort. Aim for about 6 liters of wort.

Sparging

Bring the wort to a boil, then add the Saaz hops. Boil for 60 minutes, adding additional hops if desired for flavor.

Boiling

After boiling, cool the wort quickly using an immersion chiller or an ice bath until it reaches about 70°F (21°C).

Cooling

Transfer the cooled wort to a sanitized fermentation vessel and pitch the lager yeast. Seal the vessel and allow it to ferment at a cool temperature (around 50°F or 10°C) for 2 weeks.

Fermentation

After fermentation is complete, dissolve 2 oz of priming sugar in a small amount of boiling water. Add this to the bottling bucket, then transfer the beer to the bottling bucket, gently mixing to avoid oxidation.

Bottling

Fill bottles with the beer and cap them. Let the bottles condition at room temperature for about 2 weeks.

Conditioning

Refrigerate the bottles for a day before serving to enjoy your homemade Einbecker lager cold!

Priming Sugar

If using fresh quince, wash and peel the fruit, then slice it into thin wedges. If using canned quince, simply drain and set aside.

Prepare the Quince

In a large pitcher, combine the sliced quince, honey, and lemon juice. Stir gently to coat the quince in honey and lemon juice.

Add the cinnamon stick to the mixture and let it sit for about 10 minutes to infuse the flavors.

After the infusion, pour the sparkling apple cider into the pitcher and stir gently to combine all the ingredients.

Add fresh mint leaves for garnish. Serve immediately in chilled glasses.

In a bowl, combine the Olive Oil, minced Garlic, chopped Fresh Rosemary, Salt, and Black Pepper. Mix well to form a marinade.

Prepare the Marinade

Place the Chicken Breasts in a ziplock bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes or up to 2 hours.

Preheat your grill or grill pan over medium-high heat.

Remove the chicken from the marinade and discard the leftover marinade. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear.
