Prepare the Pork
Cut the pork shoulder into large chunks, about 2 inches. This helps the meat cook evenly.
Cook the Meat
Add the pork shoulder chunks to the pot, followed by thyme, bay leaves, salt, and black pepper. Stir to combine.
Add Wine
Pour in the white wine and bring the mixture to a simmer. Cover the pot and reduce the heat to low. Let it cook for about 2 to 3 hours, or until the pork is tender and easily shreds with a fork.
Shred the Pork
Remove the pot from heat. Use a slotted spoon to transfer the pork to a cutting board. Shred the meat using two forks.
Mix and Cool
Return the shredded pork to the pot. Stir everything together, ensuring the meat is well-coated in the fat. Transfer to a container and allow to cool to room temperature before refrigerating.
Serve
Once cooled and set, serve the pork rillettes with cornichons, dijon mustard, and slices of bread.
