Prepare the Apple Mixture
Core and chop the fresh apples into small pieces. Place them into a large pot.
Add Water and Simmer
Pour 4 cups of water into the pot with the chopped apples. Bring the mixture to a boil over medium-high heat.
Sweeten the Mixture
Once boiling, reduce the heat to low and add 1 cup of sugar, 1 tablespoon of lemon juice, 1 teaspoon of ground cinnamon, and 5 whole cloves. Stir well until the sugar is fully dissolved.
Cook the Apples
Cover the pot and let the mixture simmer for about 30 minutes, stirring occasionally, until the apples are soft.
Strain the Mixture
After simmering, remove the pot from heat. Use a fine mesh strainer or cheesecloth to strain the apple mixture into a large bowl, discarding the solids. You should have a nice liquid apple cider.
Chill the Cider
Allow the strained cider to cool to room temperature, then refrigerate it for at least 1 hour or until chilled.
Mix with Sparkling Water
In a pitcher, combine the chilled apple cider with 4 cups of sparkling water. Stir gently to combine.
Serve
