Prepare the Ribs
Preheat your smoker to 225°F (107°C). Remove the silver skin from the back of the ribs and trim any excess fat.
Season the Ribs
In a small bowl, mix together the salt, black pepper, paprika, garlic powder, onion powder, and brown sugar. Rub the spice mixture generously over both sides of the ribs.
Smoke the Ribs
Place the ribs in the smoker bone side down and smoke for about 3 hours, maintaining a consistent temperature of 225°F (107°C).
Finish and Rest
After the total of 4 hours, remove the ribs from the smoker. Let them rest for about 10-15 minutes before slicing.
Serve
Slice the ribs and serve with the remaining BBQ sauce and seasonal pickles on the side.
