Preparation
Prepare the Wings
Preheat your smoker to 250°F (121°C). In a large bowl, toss the chicken wings with olive oil, salt, black pepper, paprika, garlic powder, and onion powder until well coated.
Smoke the Wings
Place the wings in the smoker and smoke for about 1.5 to 2 hours, or until they reach an internal temperature of 165°F (74°C) and have a nice smoky flavor.
Make the Hot Sauce
In a small saucepan, combine the hot sauce and butter over low heat until the butter is melted and the mixture is well blended. Remove from heat.
Prepare Miso Blue Cheese Dipping Sauce
In a mixing bowl, combine the crumbled blue cheese, miso paste, sour cream, and lemon juice. Mix until smooth and creamy.
Serve
Once the wings are smoked, toss them in the hot sauce mixture. Serve immediately with the miso blue cheese dipping sauce on the side.
