1. Prepare the Potatoes

Preheat your oven to 425°F (220°C). Wash and scrub the potatoes, then cut them into wedges or cubes, depending on your preference.

2. Season the Potatoes

In a large bowl, toss the potato wedges with olive oil, salt, and black pepper until evenly coated.

3. Bake the Potatoes

Spread the potatoes out in a single layer on a baking sheet. Bake in the preheated oven for 30-35 minutes, flipping halfway through, until they are golden brown and crispy.

4. Make the Miso Mustard Sauce

In a small bowl, whisk together the miso paste and Dijon mustard until smooth.

5. Make the Yuzu Kosho Aioli

In another bowl, mix the mayonnaise, yuzu kosho, and a pinch of salt until well combined.

6. Serve

Once the potatoes are done, remove them from the oven. Serve hot, drizzled with the miso mustard sauce, a side of yuzu kosho aioli, and topped with toasted white sesame seeds.
