Prepare the Chocolate Mixture
In a saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the bittersweet chocolate, whisking until completely melted and smooth.
Mix Egg Yolks and Sugar
In a mixing bowl, whisk together the egg yolks, granulated sugar, vanilla extract, and a pinch of sea salt until it's pale and slightly thickened.
Combine Mixtures
Slowly pour the warm chocolate mixture into the egg mixture, whisking constantly to prevent the eggs from scrambling.
Bake the Custards
Preheat your oven to 325°F (160°C). Pour the chocolate custard into ramekins. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins. Bake for about 30-35 minutes, or until just set but still slightly jiggly in the center.
Chill
Remove the ramekins from the water bath and let them cool to room temperature. Then refrigerate for at least 2 hours, or overnight.
Caramelize the Sugar
When ready to serve, sprinkle a thin layer of extra granulated sugar over the top of each custard. Using a kitchen torch, caramelize the sugar until it forms a hard, golden crust. If you don’t have a torch, you can place them under the broiler for a few minutes, watching closely to prevent burning.
Serve
Let the caramelized sugar cool for a minute, then serve immediately and enjoy!
