Preparation of Béchamel Sauce

    Make the Béchamel Sauce

    In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 2 minutes until it turns golden, stirring constantly.

    Gradually add the milk, whisking continuously to avoid lumps. Continue to cook until the sauce thickens. Add nutmeg, salt, and pepper to taste.

Assemble and Cook the Croque Monsieur

    Assemble the Sandwiches

    Spread butter on one side of each slice of brioche. On the unbuttered side, layer a slice of ham, a slice of Gruyère, and another slice of ham. Top with another slice of brioche, buttered side up.

    Heat a griddle or skillet over medium heat. Cook the sandwiches until golden brown on both sides, about 3-4 minutes per side.

    Add Béchamel Sauce

    Once golden brown, place the sandwiches on a baking sheet, and generously top each sandwich with the prepared béchamel sauce. Sprinkle with additional Gruyère if desired.

    Broil in the oven for 2-3 minutes until the sauce is bubbly and golden.
