In a bowl, combine the milk and a pinch of salt. Submerge the foie gras in the milk and let it soak for at least 2 hours or overnight in the refrigerator.

Remove the foie gras from milk, pat dry and sprinkle with sea salt and black pepper. Drizzle with Armagnac or Cognac, cover, and let it marinate for another hour in the fridge.
