Prepare the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sliced red onion. Sauté for about 3-4 minutes until the onion is translucent.

Add the Tomatoes and Peppers

Stir in the diced tomatoes, bell pepper, and jalapeño. Cook for an additional 5 minutes, stirring occasionally, until the vegetables are softened.

Incorporate Olives and Capers

Add the sliced black olives and capers to the skillet. Season with salt and black pepper to taste. Cook for another 2 minutes.

Cook the Sea Bass

Push the vegetable mixture to the sides of the skillet, making space in the center. Place the sea bass fillets in the center and drizzle with lime juice. Cover and cook for 6-8 minutes, or until the fish is cooked through and flakes easily with a fork.

Once the sea bass is cooked, sprinkle with chopped cilantro and serve immediately, spooning the vegetable sauce over the top.
