Cook the Pasta
In a large pot of salted boiling water, cook the rotini pasta according to package instructions until al dente. Drain and set aside.

Sauté the Vegetables
In a large skillet, melt the butter over medium heat. Add the sliced onions, green bell pepper, and mushrooms. Sauté until the vegetables are tender, about 5-7 minutes.

Prepare the Sauce
In the same skillet, reduce heat to low and add the chipotle in adobo sauce. Stir in the cream cheese and heavy cream until smooth and creamy. Add salt and black pepper to taste.

Combine
Add the cooked rotini pasta to the skillet with the sauce and vegetables. Toss gently to combine until the pasta is well coated with the sauce.

Add Cheese
Stir in the shredded cheddar cheese until melted and everything is well mixed. Adjust seasoning if necessary.

Serve the Pasta ala Mesa hot, garnished with additional cheese or chopped herbs if desired.
