Prepare the Rice and Beans
Cook the rice according to package instructions. Heat the refried beans in a small saucepan over medium heat until warmed through.

Cook the Eggs
In a large skillet, heat olive oil over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 2-3 minutes. Season with salt and black pepper.

Assemble the Dish
Place the cooked rice and refried beans on a plate. Top with the fried eggs. Spoon hot ranchero salsa over the eggs and garnish with fresh cilantro.

Serve the huevos rancheros with warm corn tortillas on the side for dipping.
