Prepare the Dough

Make the Gyoza Dough

In a large bowl, mix the all-purpose flour and salt. Gradually add water while stirring until a rough dough forms.

Knead the Dough

Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Filling

Mix the Filling Ingredients

In a bowl, combine ground pork, finely chopped cabbage, green onions, minced garlic, minced ginger, soy sauce, sesame oil, pepper, and salt. Mix well until all ingredients are evenly incorporated.

Assemble the Gyoza

Roll Out the Dough

After the dough has rested, divide it into small pieces (about 24). Roll each piece into a circle about 3 inches in diameter.

Fill the Gyoza

Place about 1 tablespoon of the filling in the center of each dough circle. Wet the edges with water, fold in half, and pinch to seal, creating pleats if desired.

Cook the Gyoza

Steam and Fry

In a large skillet, heat vegetable oil over medium heat. Arrange the gyoza in a single layer in the skillet. Fry for about 2-3 minutes until the bottoms are golden brown.

Add Water to Steam

Carefully pour 1 cup of water into the skillet, cover immediately, and let steam for 5-7 minutes until the water has evaporated and the gyoza are cooked through.
