Method
Marinating the Chicken
Prepare the Marinade
In a blender or food processor, combine shallots, garlic, ginger, turmeric powder, coriander powder, soy sauce, lime juice, salt, and black pepper. Blend until smooth.
Marinate the Chicken
In a large bowl, add the chicken pieces and pour the marinade over them. Ensure all pieces are well coated. Cover the bowl and let it marinate in the refrigerator for at least 1 hour, preferably overnight for best results.
Cooking the Chicken
Heat the Oil
In a large skillet or wok, heat the cooking oil over medium heat.
Cook the Chicken
Add the marinated chicken pieces to the skillet. Sear each side for about 5-7 minutes until golden brown.
Add Water and Aromatics
Pour in 1 cup of water, add bay leaves and lemongrass stalks. Stir well to combine.
Simmer
Cover the skillet with a lid and reduce the heat to low. Let the chicken simmer for about 30-40 minutes, or until fully cooked and tender.
Serve
Once cooked, remove the chicken from the skillet and let it rest for a few minutes before serving. Serve warm with Nasi Uduk (coconut rice) and your favorite side dishes.
