Prepare the Aromatics

Peel and chop the shallots and garlic cloves. Slice the ginger and galangal into thin pieces. Crush the lemongrass stalks to release their flavor.

Blend the Spice Paste

In a blender or food processor, combine the shallots, garlic, ginger, galangal, lemongrass, red chilies, coriander powder, cumin powder, turmeric powder, and salt. Blend until you achieve a smooth paste.

Brown the Beef

In a large pot, heat a few tablespoons of oil over medium heat. Add the beef chuck, cut into large chunks, and brown on all sides for about 5-7 minutes.

Add the Spice Paste

Once the beef is browned, add the blended spice paste to the pot. Stir well to coat the beef in the paste and cook for 3-4 minutes until fragrant.

Add Coconut Milk and Water

Pour in the coconut milk and water, then add the tamarind paste, palm sugar, and kaffir lime leaves. Stir to combine.

Simmer the Rendang

Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for about 2-3 hours, stirring occasionally, until the beef is tender and the sauce has thickened.

Taste the rendang and adjust the seasoning with additional salt or palm sugar if necessary.
