Prepare the Noodles

Cook the fresh udon noodles according to package instructions. Once done, drain and rinse with cold water to stop the cooking process. Set aside.

Cook the Ground Pork

In a skillet over medium heat, add the ground pork and cook until browned. Drain excess fat, then stir in soy sauce, mirin, and sesame oil. Cook for an additional 2-3 minutes until the sauce is well combined.

Prepare Toppings

Thinly slice the green onions and cut the nori sheets into strips. Prepare the soft boiled eggs by cooking them for 6-7 minutes, then transferring to an ice bath before peeling.

Assemble the Dish

In a large bowl, place the cooked udon noodles. Top with the ground pork mixture, green onions, nori strips, and soft boiled eggs (halved). Drizzle with chili oil to taste.

Garnish and Serve

Finish by adding shredded seaweed and toasted sesame seeds on top. Serve immediately, mixing everything together before eating.
