Instructions for Preparing Shio Ajitama Ramen
Prepare the Broth
In a large pot, bring the chicken broth to a gentle simmer. Stir in the shio seasoning, soy sauce, and mirin. Taste and adjust the seasoning if needed, and let it simmer for about 15 minutes to allow the flavors to meld.
Cook the Noodles
In a separate pot, bring water to a boil. Add the ramen noodles and cook according to package instructions (usually 3-5 minutes). Drain and rinse under cold water to stop the cooking process.
Prepare the Toppings
Slice the chashu pork into thin pieces. Halve the ajitama eggs. Slice the green onions and set aside. Prepare the bok choy by blanching it in boiling water for 1-2 minutes.
Assemble the Ramen
In a serving bowl, place a portion of noodles. Ladle the hot broth over the noodles. Top with chashu slices, ajitama halves, blanched bok choy, sliced green onions, and a sheet of nori. Sprinkle sesame seeds on top for garnish.
Serve
