Once cooked, transfer the eggs to an ice bath to stop the cooking process. Let them cool for about 5-10 minutes.

In a bowl, mix together soy sauce, mirin, water, salt, sugar, and dashi stock until well combined.

Once the eggs are cool, gently peel the shells off, being careful not to damage the egg whites.

Submerge the peeled eggs in the marinade mixture. Cover and refrigerate for at least 4 hours, preferably overnight for optimal flavor.
