Prepare the Ice Cream

Scoop the ice cream into small balls, about 1-2 inches in diameter, and place them on a parchment-lined baking sheet. Freeze for at least 1 hour until firm.

Make the Mochi Dough

In a microwave-safe bowl, combine the sweet rice flour, sugar, and water. Mix until smooth. Cover the bowl with plastic wrap.

Cook the Mochi

Microwave the mixture for 1 minute, then stir. Microwave again for another minute, stir, and then microwave for an additional 30 seconds until the mixture is shiny and sticky.

Dust with Cornstarch

Dust a clean surface with cornstarch. Transfer the mochi dough onto the surface and dust the top with more cornstarch. Roll out the dough to about 1/4 inch thick.

Cut and Wrap the Ice Cream

Cut the mochi dough into squares large enough to wrap around the ice cream balls. Quickly wrap each ice cream ball with a piece of mochi, pinching to seal, and dust with additional cornstarch to prevent sticking.

Final Freeze

Place the wrapped mochi ice cream back onto the parchment-lined baking sheet. Freeze for at least 2 hours or until solid.
