1. Prepare the Ingredients
Gather all ingredients and ensure the rice is cooked and cooled. Finely dice the onions and carrots, and chop green onions for garnish.
2. Heat the Butter
In a large skillet or wok, melt the butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
3. Cook the Vegetables
Add the diced onions and carrots to the skillet. Sauté for about 3-4 minutes until softened.
4. Scramble the Eggs
