Prepare the Soft Shell Crabs
Rinse the soft shell crabs under cold water and pat them dry with paper towels. Remove the gills and any residual shell fragments.
Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add cold water to the dry ingredients, whisking until smooth.
Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Batter and Fry the Crabs
Dip each soft shell crab into the batter, allowing excess to drip off. Carefully place the crabs in the hot oil and fry for about 3-4 minutes on each side, or until golden brown and crispy.
Drain and Serve
Remove the crabs from the oil and drain on paper towels. Serve hot with ponzu sauce for dipping.
