Prepare the Chicken

Preheat your oven to 425°F (220°C). Rinse the whole chicken under cold water and pat it dry with paper towels.

Season the Chicken

Rub the olive oil all over the chicken, making sure to coat it evenly. Season the chicken with salt, black pepper, garlic powder, onion powder, and paprika. You can also add fresh rosemary under the skin for extra flavor.

Prepare the Vegetables

Chop the carrots, potatoes, and onion into large pieces. Place them in the bottom of a roasting pan.

Stuff the Chicken

Cut the lemon in half and place it inside the cavity of the chicken along with a few sprigs of fresh rosemary.

Roast the Chicken

Place the chicken on top of the vegetables in the roasting pan. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).

Let it Rest

Once done, remove the chicken from the oven and let it rest for 10-15 minutes before carving.

Serve

Serve the roasted chicken with the roasted vegetables on the side.
