Prepare the Ingredients

Start by chopping the onion, tomatoes, garlic, and ginger. Cut the lemongrass into 2-inch pieces and smash it slightly to release flavor.

Brown the Oxtail

In a large pot, heat a bit of oil over medium-high heat. Season the oxtail with salt and pepper, then add it to the pot. Brown the oxtail on all sides. Remove and set aside.

Sauté the Vegetables

In the same pot, add the onion, garlic, and ginger. Sauté until the onion is translucent. Add the tomatoes and lemongrass, cooking for an additional 5 minutes.

Simmer the Soup

Return the browned oxtail to the pot. Pour in the beef broth and bring to a boil. Reduce heat to low, cover, and let it simmer for about 2-3 hours until the oxtail is tender.

Finish the Soup

Once the oxtail is tender, taste and adjust seasoning with salt and pepper. Squeeze in the juice of the lime and stir in chopped cilantro before serving.
