Prepare the Mussels

Rinse the mussels under cold water and remove any beards. Discard any mussels that are open and do not close when tapped.

Sauté the Aromatics

In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion becomes translucent.

Add Spices

Stir in the turmeric powder, red chili powder, and salt. Cook for another 2 minutes until fragrant.

Add Coconut Milk

Pour in the coconut milk and bring to a simmer. Allow it to cook for about 5 minutes.

Cook Mussels

Add the cleaned mussels to the pot, cover, and cook for about 5-7 minutes, or until the mussels open up.

Add Betel Leaves

Stir in the betel leaves just before serving and mix well.

Serve

Garnish with chopped cilantro and serve hot with rice or bread.
