Method
Hat Yai Fried Chicken Directions
Prepare the Sticky Rice
Soak the sticky rice in water for at least 4 hours or overnight. Drain and steam the rice for about 20-30 minutes until cooked. Set aside.
Marinate the Chicken
In a large bowl, combine minced garlic, chopped coriander roots, white pepper, salt, and turmeric. Add the chicken pieces and mix well. Let it marinate for at least 1 hour, or preferably overnight in the refrigerator.
Prepare the Batter
In a separate bowl, mix rice flour and cornstarch. In another bowl, beat the eggs. Dip each marinated chicken piece first into the egg, then coat with the flour mixture, ensuring it's well covered.
Fry the Chicken
Heat vegetable oil in a deep frying pan over medium-high heat. Once hot, carefully add the coated chicken pieces in batches. Fry until golden brown and crispy, about 8-10 minutes per batch. Remove and drain on paper towels.
